We got our fill tonight of some Texas goodness when we made one of our favorite dishes for dinner...tostadas! These are really easy, healthy, and yummy :-)
Stack of corn tortillas
Canola oil (or any other frying oil of your choice)
Iceburg lettuce, shredded or diced
Diced tomatoes
Rice (we like yellow rice from Vigo)
Beans (we like black beans)
Corn
Diced avocado
Red onion
You can also use already made tostadas like Mission makes in a bag.
First get the rice started in a saucepan, following directions on the bag. Usually takes 20 min.
If you are frying your tortillas, fill a saute pan or skillet with enough oil to submerge a small corn tortilla. Heat oil to frying level (hint: we put a small pinch of bread in the oil and if it turns brown fairly quickly we know its ready). Fry up the number of tostadas you want (we eat 2 a piece for a meal). While one is frying the tortillas, the other can cut up all the veggies and heat up the beans in a sauce pot. After the rice and tortillas are done, stack away!! We do rice, beans, lettuce, everything else. You can be sensible and eat it with a fork like Greg does or bring humor to the table by trying to balance your tortilla while biting into it like Libby. Hope you enjoy! Oh and be thankful for your access to cheap tortillas...ours were $2.50!! They were in the special "Mexican food" section at the back of the store instead of with the breads...eesh. :-)
My other plug for the night I meant to post a while ago when people had time to read books during the summer. If you still plan to have a reading list this fall, I highly recommend "The Guernsey Literary and Potato Peel Pie Society". I never read fiction, and this book was excellent! It is loosely based on the islander stories on Guernsey Island near the U.K. after World War II. The writing is fresh, engaging, witty, and often meaningful as you are pulled into the lives of so many rich characters. It's an easy read! Let me know if any of you have read it before.
