My seafood adventures

So some of you know that I've absolutely despised eating seafood. I didn't grow up eating it (other than popcorn shrimp once in a blue moon) and most times I have tried it I end up not wanting to cook the dish again. Well....we have two homeruns, my friends! Perhaps I am not able to stomach salmon or tuna, but any fish is better than nothing, I think.

Our home dish, compliments of my step-sister Nicole and the details from my mom:

Tilapia Cakes (makes about 8)
2 tilapia fillets
4 egg whites
1/2 green bell pepper diced
1/2 red bell pepper diced
1/4 red onion diced
1 tube saltine crackers crushed

Cook two fillets of tilapia until they are cooked through
Put cooked tilapia into a bowl, flake with a fork, and combine with the above ingredients
Form into fairly flat cakes/patties
Cook on skillet a little above medium heat (6 on a number dial range) using a little oil or pam spray until browned and crunchy on the outside

Serve with tarter sauce or whatever dip you like!

These are yummy and very healthy!!! I couldn't tell it was fish at all.

Greg and I went to Fish Daddy's Grillhouse for the second time ever last night. I highly recommend the Fish Tacos! You can get the fish fried in cornmeal or simply grilled and its wrapped with veggies and cabbage in a yummy tortilla and serve with fries or cole slaw and a delicious dipping sauce. This dish was only $6.99!!! I was expecting 1 or 2 tacos, but it came with 4!!! So I ate 2 and Greg and I each got to have one for lunch today. They make for a great leftover. In a time where even delis want to charge you 7 or 8 bucks for a ham sandwich, I love what I can get here. This may make it on our "regular" list now :-)
